to living in this area. Its Monday, day like all other Mondays, dealt with the psycho neighbor that NO ONE should ever be saddle with while doing a privacy fence install (and I FULLY understand why our client wanted said fence now, O. M. G!!!! this krazy beetch made my Ex-wife look downright SANE,,,,)
But to talk about the local benefits,,, Little surprise for me on texts. Former employee got an Elk and was parting it out to people. I took home 3lbs of backstrap,
CHILI TIME!!!!!
And the Kittehs CHEERED when daddy was cutting that back strap up for the pot. Mama-kat LOVES her some elk or venison as long as its fresh.(and daddy has holes in his legs from her letting him know she was ready for more.) And this is fresh enough that it was just approaching ambient. (and time to cut it up and get it in the pot before it started ‘turning’. I don’t like to keep game meats unless I can get them flash frozen quick, OR turn them into jerky asap.).Garlic, Chipotle peppers, Jalapeños, some HOT Banana peppers, One big ass onion dripping in juices, several ripe tomatoes diced up, chili powder, 1/2 bottle of Texas Pete, and 4 cans of Chili beans (Thats the only spot I cheat at. I hate waiting for the beans to cook proper.). Toss in some molasses for color and hint of sweet (to let the hot really creep up on ya.) and slow cook it. To be honest, I have never really sat down and tried to make a recipe for it, sometimes I toss in other sauces, or extra chili powder, cloved garlic over garlic powder, sea salt or honey: pretty much I go by what my tongue and nose tell me, and what I have available. I just know that Da refuses to try it, because he isn’t a hot type of person and he says just smelling it makes his forehead sweat.
I’ll be able to eat it tonight, but the REAL flavor will be tomorrow after sitting on the woodstove simmering all night, filling the house with good smells making me hungry every time I inhale.

And I have zero clue how to make chili or soup FOR ONE. This whole mess mostly fills a 2 gallon stew pot, and I will be eating on it all week (and may keep adding to it as it gets down to the mid point: Perpetual chili pot.) My workmates may not appreciate me too well after a week of chili, but thats their nasal problem, not mine LOL)
Yups, hateful Monday, up to a point, but it looks like it may be a pretty decent week.
At least for my belly it will be.
Dammit man! I’m way down in Cent. FLA., and my nose is perking up!! Dam but that sounds great. I’m envious. And yes, I make chili year round.
Y’all take care,
Mike.
